We support accurate labeling of mushroom products

Two major mushroom product makers are at odds over what can be labeled as real mushroom products, and we have thoughts. NAMMEX wants the FDA to regulate the word “mushroom” in products to mean the full mature mushrooms depicted on their labels and in centuries of cultural use. Host Defense’s Paul Stamets wants his lab-grown mycelium to be labeled as the fully grown mushrooms depicted on his labels. As a mushroom extract maker who uses fully grown mature mushrooms, Half Hill Farm supports accurate labeling of mushroom products.

Recently, mushroom product maker NAMMEX filed a regulatory request with the FDA seeking clarity in mushroom supplements industry labeling.

At issue are major brands that make “mushroom” products from lab-grown sheets of mycelium cheaply propagated in a matter of days on rice or grain substrate. Once the substrate is myceliated, it is then dried, and extracted or encapsulated and labeled as made from the mature mushrooms often depicted on the label. These products unfortunately often contain the actual grain substrate in the product and are consumed by the purchaser. Some companies, like Host Defense, accurately include “rice” or “grain” in their ingredients because of this. Some don’t. Either way, the shorter and cheaper process certainly makes for more profit.

It is no surprise that some brands that make products from mycelium are upset with NAMMEX and have issued a statement opposing their effort. One statement, led by Host Defense’s Paul Stamets, argues that his company and other major brands should be able to label their mycelium products as “mushrooms” because mushrooms are made of the mycelium he uses to create his products. At the same time this regulatory request for clarity is being made by a mushroom product maker, the poultry industry, in a bit of irony, won FDA approval allowing them to label lab-grown cultured cells as “chicken.” While science can definitively conclude a petri dish of cultured cells is indeed cultured from real chicken (just as mycologists can determine mycelium is cultured from real mushrooms), a plate of lab-grown cells is not the same as the real thing.

Half Hill Farm expands to new Woodbury location

(Woodbury, TN) – Half Hill Farm is moving into the building next to DTC on High Street in Woodbury. The kombucha and extract maker purchased the 3,600 square feet building with plans to expand manufacturing and retail.

The High Street location will feature a kombucha tap and tasting room with growler refills, products made by the farm, hand crafted gifts and products that promote better health and well being.

“We are so excited to keep growing in Woodbury,” said co-owner Christian Grantham. “We’re grateful the Arts Center gave our farm an opportunity to grow and for the community helping us find a home right off the square.”

Half Hill Farm is currently in the third year of a shared lease at the Arts Center of Cannon County where they make and bottle kombucha, botanical extracts, apple cider vinegar tonics, tinctures, teas and more. They will officially open on High Street when the lease with the Arts Center is up at the end of the year.

“Customers can still get our kombucha on tap at the Arts Center all year,” said co-owner Vince Oropesa. Arts Center location visitors can also try Half Hill Farm’s new herbal tea-based energy shots and other products coming out later this year.

Since opening retail and manufacturing at the Arts Center in 2016, Half Hill Farm launched several new products proudly made here in Woodbury. The most popular is kombucha, a fermented, fizzy health beverage available in different flavors by the bottle, growler or keg.

Half Hill Farm opened a second retail store in Bell Buckle, TN (Wellness Emporium) earlier this year. The company partnered with Manchester native Scot Smotherman to help make the expansion happen. Smotherman will manage Half Hill Farm’s business development and growth.

Half Hill Farm expands to second retail location in Bell Buckle

(Woodbury, TN) – Half Hill Farm is opening a retail store in neighboring Bell Buckle. The new location will be the second for the maker of hand-crafted kombucha, extracts, tonics and other natural health products.

Half Hill Farm’s Wellness Emporium in Bell Buckle will feature all of the products the farm manufactures in Woodbury plus other products that promote better health and well being.

“We are excited and humbled by the opportunity to expand locally,” said Half Hill Farm co-owner Christian Grantham. “The Best part of our growth is that it comes directly from customers feeling good and making healthier choices.”

Half Hill Farm is a certified organic farm that got its start growing mushrooms. Their popular mushroom extracts now ship all over the United States. The farm plans to expand its extract offerings as well as offer craft sodas and teas.

Local demand for Half Hill Farm’s kombucha and apple cider vinegar tonics made at the Arts Center of Cannon County has the company searching for larger manufacturing space as well to bring on wholesale accounts.

The company aimed to make kombucha, a fermented and carbonated black tea flavored with juices, at its Woodbury location and sell it at markets but never out produced local demand. Half Hill Farm doubled their brew tanks this year and are reaching their maximum production.

“We had no idea people even knew what Kombucha was,” said co-owner Vince Oropesa. “We love Woodbury and have been working hard over the last year to keep our manufacturing based here.”

Half Hill Farm’s team is also growing to help with growth with the support of Scot Smotherman, Manchester native, UT Knoxville graduate and small business owner. Smotherman has worked for decades in sales for the tech industry.

“I have been extremely impressed with Half Hill Farm’s commitment to product quality and their genuine concern for their customers’ health has motivated me to support their growth and expansion,” said Smotherman.

Fermented food & beverage, vinegars, and herbal extracts are seeing a revival as consumers are reintroduced to time-tested natural remedies and fermented food culture. Growth in fermented foods has led Middle Tennessee State University to create a first of its kind fermentation program to help better position entrepreneurs and an educated workforce.

Made in Woodbury: Celebrating one year with expanded hours

It’s hard to believe we opened our retail store one year ago today! What’s even harder to believe is how much we’ve grown with you! Thank you!

Since opening with our kitchen partners, we expanded our mushroom extract offering. We also started our line of natural extracts and tonics and helped our community replace sugary sodas with the goodness of locally fermented kombucha on tap.

To celebrate our growth, we’re starting year two with more hours and more opportunities for better health and well being. Our retail store in the Arts Center of Cannon County is now open Tuesday – Friday 10-6 and Saturday 10-4.
