How to make sauerkraut – fermenting veggies

FERMENTING VEGGIES: This small haul from the Murfreesboro Saturday Market got made into some tasty sauerkrauts we hope will be ready late next month. These are recipes with ginger that we make at home for ourselves and decided to add to the krauts we currently offer at Wellness Emporium – Woodbury. One is Ginger Beet. The other is Carrot, Ginger, and Turmeric.

HOW TO MAKE SAUERKRAUT: Sauerkrauts are easy to make and so good for you. They are rich in dietary fiber, nutrients, andgut-healthy probiotics.

All you need to do is chop up a blend of 75% cabbage with 25% other veggies and 2% salt added. Weigh all your cabbage and mulitply the weight time 0.33. The resulting number is your 25% of other veggies. After chopping or shredding your ingredients, mix them together and weigh it. Multiply the total weight with 0.02. This is how much salt you need to add, which is 2% of the total weight.

Mix all these together kneading the veggies in a bowl. You should see brine dripping from each fist full. Let it sit for about 20 minutes, then place in a fermentation vessel for about three weeks making sure all the veggies are completely submerged in its own brine. You can use fermentation weights to hold your fermenting veggies below the brine surface, or fill ziplock bags with water and place on top.

Fermentation will go through a couple of phases. If you use an airlock or airtight lid, you will need to burp the ferments. This will take about 3 weeks. When it’s done, jar it up and refrigerate to slow or stop fermentation. It should be a crunchy, tangy, probiotic bite of fermented goodness you can add to most meals!

COVID-19 Pandemic and our commitment to better health & well being

COVID-19 PANDEMIC: Our wellness advocates are committed to your better health & well being no matter what life throws at you. During public health emergencies, our advocates are vigilant with cleaning procedures designed to disrupt transmission from touch surfaces and providing you the very best natural products to boost your immune response. We are closely monitoring CDC guidelines for businesses and will remain open with capacity limits set at 10 people in our retail spaces. We are here to arm you with knowledge, confidence and nature’s best tools to defeat fear and the health challenges fear can amplify.

While there is no known cure for COVID-19, there are a couple of ways to make transmission more difficult especially for those at higher risk. Both of them require acting on shared knowledge. The first option is entirely up to you – creating physical boundaries. Wash your hands. Don’t touch your face. Stand at a distance from others. Regularly clean your cell phone. The second option is a more elusive knowledge of natural remedies that can help amplify your immune response. Supplement your gut health with probiotics, locally fermented foods and beverage, whole food sourced vitamin and mineral supplements, elderberry, essential oils, immune boosting mushrooms and herbals.

We can’t be there to remind you to wash your hands, but we are here with knowledge of nature’s remedies and hand crafted quality products for better health & well being.

It means a lot to us to have a permanent home here in Woodbury. We want to thank Tommy and Linda Malone for this opportunity. We wouldn’t be here without the opportunity to grow our business at the Arts Center over the past three years and for them thinking outside the box with us and letting us share the space to make that possible. It feels like forever ago that we were a 6 foot table of organic vegetables at the farmers market next door!

Earlier this year we partnered with Manchester’s Scot Smotherman to expand retail with the Wellness Emporium, a second store location in the heart of Bell Buckle, TN. We truly believed if it failed we could always offer services installing taps and walk-in coolers!

With Bell Buckle doing well, growing demand quickly led to the need for bigger manufacturing space. We were running out of product and turning away a lot of wholesale requests. High Street was the right place at the right time.

High Street: Half Hill Farm is expanding our craft fermented food and beverage manufacturing in the back part of the High Street location off the square. This includes kombucha and kefir, popular probiotic fermented beverages we lightly flavor with organic herbs and juices and bottle as a fizzy soda alternative. We will also continue expanding extracts and hemp oil products to include infused food and beverage and partner with MTSU’s Fermentation Science program for shared learning and resource opportunities.

We are proud of the work our team does to bring better health and well being to our community. Come visit us!

The Wellness Emporium is open seven days a week with several flavors of Half Hill Farm’s kombucha on tap and available by the cup, bottle or growler refills. Follow us on Facebook.
